This Funeral Potato Recipe Can Warm Hearts And Bring People Together

Funeral potatoes are an all-time Utah classic! Commonly served at funerals (hence the name), or any large family gathering, funeral potatoes are some of the best comfort foods out there. The cheesy goodness brings back fond memories of a home-cooked family dinner at my grandparents’ house, laughing, playing insane games with my 50-ish cousins, and generally having an amazing time. Hopefully this cheesy potatoey goodness can become a tradition with your family too.

Ingredients:

- 2 pounds frozen shredded hash browns

- 1/2 cup unsalted butter, melted

- 1 can condensed cream of chicken soup

- 2 cups sour cream

- 1 small onion, finely chopped

- 2 cups shredded cheddar cheese

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 2 cups crushed cornflakes

- 1/4 cup unsalted butter, melted


Instructions:

1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.

2. In a large bowl, combine the melted butter, cream of chicken soup, sour cream, chopped onion, shredded cheese, salt, and black pepper. Mix well.

3. Add the frozen hash browns to the bowl and mix until the potatoes are evenly coated with the mixture.

4. Pour the potato mixture into the greased baking dish, spreading it out evenly.

5. In a separate bowl, combine the crushed cornflakes and melted butter. Stir until the cornflakes are coated with butter.

6. Sprinkle the buttered corn flakes evenly over the top of the potato mixture.

7. Bake in the preheated oven for 45-55 minutes or until the potatoes are cooked through and the top is golden brown and crispy.

8. Remove from the oven and let it cool for a few minutes before serving.


Note: You can add diced ham or bacon, different types of cheese, or garnish with chopped parsley for added flavor and presentation.
